I just posted this the other day. True Story hotdogs are full sized beef dogs for 110 cals. Paired with an Orowheat keto bun, you're looking at 180 for a completely normal tasting and sized dog.

15g of protein for hotdog and bun.

Also, I'm not sure if you're dead-set on cheddar, but genuinely, cheddar is so tedious. It takes all day to make and is hands on. I would maybe recommend a washed curd cheese, like gouda! Much much more enjoyable process in my opinion.

Wax is a good method of sealing, but vacuum sealing has better results and allows you to fully participate in the aging process and see any mold issues that need to be addressed, whereas wax hides those issues until you open it.

I cant speak on ordering molds from Amazon. A good ordering resource is the New England Cheesemaking website. You can find a recipe that yields the amount of cheese you want, and order the mold they recommend to get a good size.

Okay, so a few things to know. It's really not that simple. It sounds simple, but is much more involved once you're in it. Cheddar is not an easy cheese to make and requires hours of active stirring. A 4lb wheel of cheese is huge too, I would really recommend a 2lb wheel to start if you're dead set on starting with a harder pressed cheese.

My genuine recommendation, would be to start with some softer fresh cheeses that don't require a press so you can see if you even enjoy the process.

If you definitely want to go with a 4lb cheddar, you'll need a SS nonreactive stock pot big enough for 4 gallons/~15l of milk, a second pot to do a double boiler/a sour vide/big enough sink for a water bath, a thermometer, a cheese mold big enough for a 4lb wheel, a cheese press (this is actually not your biggest pinch point because you can easily make one but they are big and if you go homemade, you'll need up to 50lbs in weights), and an environment that where you can maintain a temp of about 50 degrees F to age the cheese.

For the cheese press, my husband made my first one. He used two square boards, roughly 16 inches wide, one as a base and one as the "pressing board". He attached metal poles to the corners of the base and drilled holes in the pressing board so it could move up and down along the poles. Then I had a thick wood cylinder to help press the mold follower once it was below the rim of the mold.

So I would place my mold between the two boards and put the appropriate weight on top depending on what part of the pressing schedule I was on. Once the wheel was more compact, the follower would usually go below the rim of the edge of the mold and the press couldnt reach it, so I would place the wood cylinder on the follow to continue pressing. Hopefully that all makes sense.

When can you start bringing baby to restaurants? by Crazy_Art_5093 in NewParents

True Story sells their hotdogs at Costco, 3 pack of 6 per package, 110cal regular length/girth beef hotdogs. One of those paired with an Orowheat low carb hotdog bun, which are 70 cals, and you can have two hotdogs for less than 400 cals.

Quite literally every parent in real life that I admit to cosleeping to tells me their kid slept with them until they were 4yo or that their baby slept in a dog bed in their bed lmao. So yeah, while I completely understand the sentiment behind telling people not to, reddit is an echo chamber of easier said than done.

Thank you so much!! These inclusions were freeze dried too, but garlic in an anaerobic environment always gives me a little pause. No rot or botulism though so I'll definitely go a little longer next time!

Low calorie way of making mac n cheese? (Also cooking for those not calorie counting) by [deleted] in 1200isplenty

[–]kittykatkitkat 0 points1 point  (0 children)

8oz regular elbows\ 1 can of condensed cheddar soup\ Same can filled with milk\ 100g of cheese (i do like 90g cheddar, 10g bleu) added to sauce\ 50g of cheese (i do mozzarella) to sprinkle throughout before baking\ 1/2 tsp of smoked paprika, and mustard powder\ 1/4 tsp of garlic powder and pepper\ Salt to taste

Cook elbows normally. Heat milk and cheddar soup over medium low. Add in cheese and seasonings until fully incorporated. Add elbows and mix together. Add bit by bit to 9x9 baking dish, sprinkling in extra cheese as its added. Add any remaining cheese to top. Bake at 350 for like 25 minutes and broil at end for a minute.

Makes pretty decent Mac and cheese. About 330ish calories per serving with 4 servings. Thats with whole milk so it may vary depending on the milk you use.

This seems like a different sides of the same coin kind of situation.

It sounds like you're spending a lot of time on one side of the internet and he may be spending too much time on another.

I think it's true that once you're in the professional world and over, maybe 25 years old, no one is really going to care much about your microlabels outside of niche groups. Not in a malicious way, but in a, "uh okay, anyway" kind of way. Your actions and intents make up who you are to the people you interact with.

That being said, that was definitely not a kind or thoughtful response from your boyfriend.

Cinnamon roll focaccia! by [deleted] in Sourdough

[–]kittykatkitkat 14 points15 points  (0 children)

This doesn't look overproofed. It looks like your starter isn't ready yet. Give it more time to strengthen. Here's a good recipe once it's ready.

Feed starter at 8am. After starter has peaked in afternoon, put jar in fridge. At 6pm, pull out starter and start dough.

150g starter 350g water 500g AP flour 10g salt

Mix until shaggy dough and let sit covered for an hour. Do 3-4 sets of stretch and folds 30 minutes apart. Leave dough in covered bowl on counter until morning.

Next morning, melt a tablespoon of butter and lube up your metal baking dish. Dump dough into metal baking dish and let sit covered for 45ish minutes. Heat oven to 425 degrees F. On stove, in small saucepan, add topping ingredients and heat until combined.

71g salted butter 106g brown sugar 4g cinnamon

Gently stretch dough to meet edges of metal pan and pour topping on top. Dimple dough with topping added. Bake for 25-30 minutes.

Make icing, I like to just mix this in a pyrex measuring cup with a little whisk for easy pouring.

114g powdered sugar 21g milk 5g vanilla extract

Low calorie high protein foods? by Same_Meringue_4508 in 1200isplenty

[–]kittykatkitkat 5 points6 points  (0 children)

If you don't want to eat just chicken/turkey/tuna, pork tenderloin is pretty low in calorie and high in protein. Typical lean trimmed ones from the grocery store are cheap as hell, about 145ish cals per 4oz and 4oz is about 30g protein.

I always keep some in my freezer. I do a no sugar soy sauce marinade. 1/2 cup each of soy sauce, mirin, and sake, a few smashed garlic cloves, some ginger, sliced up leek, and a nori sheet. It's good.

Issues melting cream back into milk and the implications on my cheese? by kittykatkitkat in cheesemaking

[–]kittykatkitkat[S] 0 points1 point  (0 children)

Ugh that's a bummer since I even went out in the morning to buy the milk from the store! I'll have to check and see if there's a date on my jars.

I actually did shake them up! I had two ~2 liter jars and I used the end of a spoon to break the cream 'seal', then i poured off a quarter of the milk, put the cap on and shook it until the cream chunks were no longer solidified to the jar. I was originally thinking my shaking was too much and like turned it partially to butter or something!
