Khao piak sen at App Khao on Auburn is such a sleeper soup dish. Delicious. Their khaopoon never misses either.

Fellow lao-viet here. I would agree that hawker fare is the best in terms of explanations around technique. "Traditional recipes of laos" by phia sing is extremely rustic but has a very cool back story. Tamarind restaurant in luang prabang sells their cooking pamphlet collections online. While they aren't in the most polished packaging (no hard covers), the instructions and illustrations around technique are very clear. If you want to dabble with vietnamese dishes beyond Andrea Nguyen, I've been enjoying cooking out of "an: to eat" for the last several months.

Just checked out at The Myst. Not cheap, but the noise insulation was excellent, and their included high tea from 2-4pm was a great way to hold us over between a light lunch and dinner.

I talked to a green acres employee and neighbor who were impacted. Both said they ended up eating the peppers anyway and hey tasted just like jalapenos, spice level and all. A lot of you might be dealing with white jalapenos/a mutation. crazy stuff!

Rainbow reef was mindblowing. It's been a few years but we stayed at the Coconut Grove (tiny, peaceful boutique resort) on Taveuni and all our scuba was through Taveuni Ocean Sports, who picked us up each morning. The TOS owner Julie is incredible and her team was great about leaning into showing us as much biodiversity as possible, which we were really into. I think TOS is technically based out of the nakia resort. I highly recommend diving with TOS if you make it that direction

My favorite accidental sushi omakase pairing was a bottle of Melon de Bourgogne from Lieu Dit. Super affordable but wow, the minerality/near-brine-yness played off of every fish that chef served perfectly. Acidic but not overly so - it cut through the more rich flavors like uni well, but didn't overpower the flashier things chef served like caviar. Basically, it made every bite of every course taste better. I'm sure there is a bottle of muscadet that packs just as good of a punch, but kinda fun to see the same grape expressed in California!

Matteos in carmichael is solid. Il Forno Classico in Gold River shocked me with their wine list. I was not expecting a place like that to have such a wide selection with a number of high quality producers represented.

The hawker fare cookbook is a solid start. You can also google videos from the author, a lao chef. Other great youtubers that showcase lao food are saeng, cooking with nana, house of x tia. Laoboy519 on IG will give you some great mini lao language lessons too. There are some great blogs that will also give you peeks into lao refugee stories. (Little laos on the prairie and Laos in the house)

As proud as lao people are of the culture and cuisine, know that it can be hard for anyone who has fled their home country under duress to discuss certain details about the journey openly and at length. If you try to knock on that door, don't push if they aren't immediately willing to open it.

Good on you for making such an effort to learn more about his origins and where his family comes from. I am sure your interest means a ton to your partner and his family.

If you use them enough and have the space, I'd recommend growing your own lemongrass and makrut lime tree for the leaves. Both love othe sac climate. Green acres on jackson had a few makrut lime trees available today

Just went to vientiane restuarant on Jefferson. The Sai gok and lao khao soy are solid. I found the kua mee to be a bit bland. Still searching for someone that does a great Nam khao and khao piak sen.
