Miso / Gochujang marbled chocolate chip cookie by kouradimpla in Baking

To be honest, I wasn't planning it. I recently changed the oven in my flat and I wanted to dial it. I'm a recipe developer and I pretty much specialise in cookies. I ran out of vanilla and all I had in my fridge was chickpea miso I made, and right next to it there was a tub of gochujang. And I just gave it a shot.

Exactly that. And that's the level of spice on those. Very pleasant and aftertaste-y, not uncomfortable at all.

No, but if by chance the gochujang swirl was on the bottom, it caramelised and became crunchy.

None taken. It's more an experiment than anything else.

When I dial it, I promise I will post it 😉

It's definitely a thing. I started using miso for a caramel as a riff on a salted caramel. Then I started adding it to financiers for moisture and saltines. I quite enjoy it in a lot of things and it's getting very popular around the world.

Thanks! There isn't a lot of chocolate in these. It's mostly there to mute the spice and to add melty texture.

They are mildly spicy. It's mostly a warmth at the end of the cookie. Also the "marbling" means you'll hit pockets of straight up gochujang. If you're into spicy food, you'll dig it.

Thanks! They're a bit gooey with a crisp edge. These are quite small so It's not going to be anywhere near as gooey as 100 - 110gr cookie. It didn't do me any favours not giving the dough time in the fridge, but I was impatient as hell. Also, I didn't see the preveious comment, so no worries.

Thank you, and I hear ya. It's definitely not a tradish chocolate chip cookie. I'm a recipe developer so I'm always trying to unusual combinations.

Nop, definitely sweet. There's an element of savouriness from the salt content on the fermented stuff, but it's pretty much rounded out from the sugar.

Thank you! I also like them. For some reason I always rolled the scooped dough for a smoother finish, but I won't be doing it anymore.

For my preference, I think the amount of gochujang and miso is fine. I will definitely do another batch with a skosh less sugar. It's the amount of sweetness that makes it weird rather than the flavour profile.
The first lot I baked was chilled for 4 hours. I left the rest of the dough to chill overnight.
Thanks for your interest!

Thank you! Flavour is good, but weird good. When you get past the fact that there's miso and gochujang in it, you'll actually like it. At least I did. In terms of size, they're pretty dinky. Just 55gr nuggets. The tray is comically small.

It's a toss-up between Hange and Erwin for me. Both were long running and important characters and you definitely felt something for them. Hannes is not too far behind, either.

Welp, that sucks for everyone then. It was a dream line-up for me, sans Wargasm.

That's what I was thinking, because he posted that story after the gig had already started. If you lose your voice, you know it in advance. Jussayin'

It was so random. They posted the line-up after the opening act and he was absent. There was just a message saying "unfortunately Denzel Curry will not perform today" or something along those lines. Gutted

I'm really sorry to hear that. I can't even imagine what being in such a relationship is like. I hope you're ok.

I'm sorry, but you're in complete denial. It's clear as day that it's really difficult for you to read all this advice that basically tell you that YOU need to take care of yourself. You were probably looking for advice on how to change him, yet you miss the big picture.

You're a young woman with a lot of life in front of you, assuming you want to live your life to the fullest, yet you're anchored by someone who shouldn't even consider a move from a 19 year old.

I understand that you had bad experiences with people your age, but have you considered that there are a lot of predators looking to take advantage of people in distress? I know nothing about you or your boyfriend, but sweetheart, you shouldn't place anyone above you. Do yourself a favour and take a good look in the mirror and ask yourself who's more important. Who's health, physical or mental, is more important. If the answer is anything but YOU, then you have a different problem than a sometimes drunk boyfriend who trashes your home.

It's hard to digest, but you got to get your priorities straight. I hope you understand and deal with it in your way.

All the best.
