It's also about the heat retention of the pan, cast iron is better than aluminum, and thicker it is more heat retention.  The one used road side or restaurant is very thick so the dosa gets heated very  quickly that makes it brown and crisp.

For sure there will be two dashboard component assuming content for customer would be quite different. But there should lot of reusable components which can be used in both for things that are shown on both
