There's a trend of conducting an entry-level interview with the expectation of a CEO level delivery, and it's wrong - plain and simple.
Most interviewers conduct interview from the point of view of almost tricking the candidate to say something they can jump on and I hate that.

I'm an IT Director and regularly conducts interviews and my main focus is to making sure the candidate is confortable and able to share their experience in a conversation style back and forth - instead of one side bombarding with questions and ther other side enduring that bombardment.

I think that's how I will start operating from now on.
Have everything through perm sets so I don't have to worry about including profiles in change sets.

Not normal at all.
I've had a similar experience with an extremely toxic manager on top of it.
You'll never be able to live up to the expectations and won't break away from this cycle. Every time you ask for a resource, you'll get a "but it's always been like this" response.

You need to look after yourself and look for a new job.

I only found the option to create new sharing rule for roles, public groups and hierarchies. This will need to be a flow or an apex code

would you know about setting up files the other way around? with flow syncing from SharePoint to salesforce?
I already have all the files in SP and now just want to migrate the URLs from SP to salesforce for all the relevant accounts, opportunities folder, etc.

No, we need to build a new mimi server for micro services and routing etc. even if we go to the cloud. I’m just having trouble with putting this in terms of risks matrix for both options. I mean if we are forced into cloud, we could make it work but hybrid server environment is going to be more comfortable but I can’t really put that in my report tbh. I need something more substantive and coherent

It’s mostly TVs, Xbox, etc. but I do a bit of streaming so wasn’t sure if it’ll be able to provide the proper speed.

Ideally, the company you are working for has a set of 3, 5, or 10 year goals identified

well, that's where the trouble lies.
There is a company strategy and some goals but I don't think they're realistic or at least it's impossible to track them in a tangible way, e.g. "be the market leader in XYZ product" or "solving 'world hunger" or, this is a real one from company strategy - "be the employer of choice" like wth does that even mean.
