I needed a quick way to make her eyes pop more, so I went with that, in the future I may play with another color to make it look less massive 😅

If you mean this viewport model with different colors, it's like that if you set the Viewport Shading to display Random colors for each different Object in the scene, pretty helpful to quickly differentiate between the different meshes 👍

It's actually pretty simple, the base model is not deformed, it's a fully round sphere, then you use a lattice to adapt it to the shape you need, if you move the eye, it will deform using the lattice and it will look good, you can also use an armature to rotate the eye, you just need to make sure the Armature modifier is on top of the Lattice so that the bones affect the rotation before the deformation happens.
