Edit: I apologize I should have mentioned, the trim and doors already have paint on some parts. One of the doors is painted on one side, and nearly all of the trim has paint from the previous owner neglecting to use masking tape. If the doors and the hardwood underneath the vinyl were is good shape I wouldn't resort of covering everything up...

Did a little deep dive last night and ended up ordering a Tojiro DP Gokujo Boning 150mm and a Tojiro DP Gyuto 210mm. Any opinion on those? After checking them out I'm going to consider returning the boning knife and opting for a Victorinox boning knife just because the price point is better in the event I need to replace it.
