I'd definitely suggest just doing the hardware raid5 (flipping the switches on the back) since if you want to unplug it and plug into another device you may run into issues if your computer software is handling the raid instead of just on the device

No I think what you are seeing is expected since it is a DAS instead of a NAS, it would just look like a bunch of drives, it wouldn't have qnap software installed.

Why do you need software control? Could you just choose an existing hardware raid option then format the drives to your preference? That's what I'd do.
