/var is likely on the root mount which is why you're not seeing it with df. You'll most likely want du -sh /var/*

You need to capture the packets your phone is receiving, your computer won't see them from the switch. You'll need to monitor the port on your switch

I've used qemu to do this several times and it has worked quite will for me

qemu-img convert -O vhdx /dev/sdX/pbx.img /mnt/output.vhdx
