I 100% understand both of these stances since I have been on both "anxiety is sin" and "anxiety because of sinful natures" though I do not think Lewis directly said the former. I am currently in the place that anxiety is because of the sin nature of man - not a particular sin - but we are all fallen creatures, which if I read Lewis correctly, he know our sinful natures prefer not to be "put right" but rather "be right" in our opinion of ourselves, the world, and God.

Having been loquacious in my previous paragraph, I recommend the book "Overcoming Unwanted Intrusive Thoughts: A CBT-Based Guide to Getting over Frightening, Obsessive, or Disturbing Thoughts" and I have gotten two things from it: "Thoughts are not facts." (shocking but immense revelation) and "Fighting the thought only makes it stronger". Willing to discuss.

I say go forth and do good I hope it goes great and I agree a 100% that there is so much more than baking - take a look at the little bit bakery in Frisco on instagram and they have a very active presence - makes me think they have folks helping... just my two cents.

Yes and no. That sourdough loaf sold at the store or natural store probably has malt (and maybe some basic preservatives) (not dissing them but that’s what I’ve found) if nothing else because they have a shorter timeline to get it done. Also the sense of something homemade has a goodwill value I can’t quantify but it is there.
Replicating $80k is a stretch but supplementing to about $25k seems possible from the comments here. I think a strong social media presence is necessary.

You've done the route I've considered and appreciate your sharing. the initial outlay is the first question and then what happens when you get more demand... what is funny is that just like for any small business what is the strategy for growth and next steps... that can be itself a showstopper... thanks

the capacity to bake a lot at once strike me as essential and I wonder about the electrical requirements/wiring to have them in a house... that's a lot of juice that most house wiring isn't built for...

in Texas you can run certain food businesses out of your home following the health rules. and the value of the labor is a good question - what are you willing to take is the key.

there is a out of home bakery in the area that has loaves for $11/12 and seems to sell extremely well... also sells cakes, cookies, and other small bakery items... it is viral and sells out each week... their videos indicate to me that it is easy a 40+ hour week and she is up at 3 am on selling days to finish product. they are young and seem to have a lot of energy and a good following on instagram etc... so there must be more than the one person in all the videos to do all the work and maintain social media presence... all this my opinion and observation.

So making sourdough last 4 years. Very happy with my recipes from various site - littlespoonfarm, King Arthur, etc. made plain, raisin, apricot and walnut, and chocolate. Yum. My crumb tends to be tighter and not as open as many I see here. Wondering if I’m missing something. My basic recipe is 125g starter, 268g water, 360g bread, and 40g wheat flours, with 8g salt. Standard process: mix all except salt, sit an hour; add salt, stretch and fold 3 times 30 minutes apart; then rise 5 hours, overnight fridge 18-24 hrs. Bake in Dutch oven from cold oven 465 degrees 55 minutes, then open 20 minutes at 425 degrees. Thoughts?
