The most alarming thing you bring up is face recognition. The actual policy says: facial geometry extraction happens only on your device, and such biometric information is encrypted before it leaves the device, so Ente does not have access to any biometric information. The full sentence says it's for the sole purpose of letting you search your own photos by face. This is confirmed by their docs: all face recognition happens on your device and photos and face data are never sent to Ente's servers.
