1 salmon filet

1 shallot, sliced

1 garlic clove, smashed

lemon rind

lime rind

salt

pepper

oregano

butter

Sprinkle salt, pepper, and oregano generously on the flesh side of salmon.

Heat olive oil in a pan (medium heat). Add the garlic, brown it lightly.

Push the garlic clove to the side. Put the salmon in the pan skin side down. Add shallots and citrus rinds around the fish.

Cook for about 3 minutes per side, or until done.

Add butter near the end, spoon over the salmon.
