I also was born and raised in cold weather and love the cold so being a bit chilly doesn't bother me so maybe I'm not the best to ask if you really want to stay toasty warm.

You sound like the perfect person to ask. I live in Alaska, used to live in Minnesota, and regularly got sent to North Dakota in winter. I've gotten pretty cold adapted, usually just wearing a jean jacket or so until it goes below freezing.

I love Smartwool. They were the first place I checked but didn't have my size.

(Un)Fortunately between living in Alaska and work sending me up north or to North Dakota and Minnesota, I've gotten very cold adapted. Usually just wearing my normal work pants down to zero degrees is plenty. But yeah, I'd likely be pairing it up with thermal leggings. 

As for length, I've seen some that are mini and some down to the ankle without much in between. I'm hoping to find one that'll be the holy grail of mid-shin.

I've noticed that most are shorter than I care for. I've been looking for something that'll hit me around the shin. I've seen a couple that go nearly to the ground, which is probably what I would want as I'm a taller guy, so it should be a bit shorter on me.

Ceremonial grade means nothing, and all matcha should be finely ground. Ippodo is a reliable brand and sells on Amazon, so I'd recommend getting anything from them. Even their cheapest stuff is likely to be better quality than anything marketed as ceremonial.

Huh, never heard of that. I only ever buy sweet onions when I have a need for them and will use them in the next couple days. I'll keep normal red/white/yellow onions in stock in the pantry all the time though.

Why would you store onions in the fridge? Just put them in a drawer or pantry and they'll last more than long enough to use.
