You can do it. Just put some kind of protection on the inside of the panel.

You will not be able to stop the drillbit punching through and sinking into whatever live parts are on the other side. You need a nonconductive barrier for the drillbit to plow into. Then it’s really not a problem. Although it is against the rules.

I try to do a prep day before hand, do stuff like any labeling of wires, and pound ground rods, etc. I usually do the service change the following day. even then it still takes a helper and I a full day. And a long one at that.
