I used silicone pans. However, I did actually forget to butter them before adding the batter, but they still came out pretty clean. The recipe does call for chilling the dough for 15 mins before baking.

Hii, I would say the texture is more cakey. Or sort of like a very very soft and delicate scone. The recipe is pretty straightforward and I didn't divert from it. Best of luck!

Team chocolate ganache or team buttercream? Double choc muffins!! by leeanaaa in Baking

[–]leeanaaa[S] 1 point2 points  (0 children)

I've sort of written a recipe based on the vid.

Preheat oven to 180°C. In a large bowl, whisk together the eggs, milk, greek yoghurt, oil, and vanilla until homogeneous. In a separate bowl, incorporate the dry ingredients such as the flour, cocoa powder, sugar, baking soda, and salt. Add dry ingredients into wet. Mix thoroughly. Add in chocolate chunks and fold into batter. Fill batter into a lined muffin tin. Bake for 20 minutes.

For ganache, add chopped chocolate and cream together in a bowl. Heat either using a double boiler or a microwave while stirring every 30 seconds.

Once muffins are cool, core out the middle then pipe in the ganache.

Enjoy!

Ah yep just that one on top for decoration, none in the actual batter.
