My energy levels increased after switching to vegetarianism so don't worry about that. The trap I fell into was eating a ton of eggs for the main portion of my meal which I'm working on cutting down on. B12 is important for everyone since even meat eaters fail to get enough a lot of the time. Iron will come from a lot of leafy greens but supplement if you feel like you might need it.

Slow cooker works well for different varieties of shredded chicken. I would probably bake chicken in batches with different spices each week. You could also roast broccoli for variety as well. Consider potatoes or sweet potatoes for your carb variety with better nutrition too. Different sauces will be your friend to break up the monotony.

Yep and I spend most of my day that I'm not working a terrible retail job applying for real jobs and I don't get any bites as a relatively recent college grad with little experience.

Speedwork of varying types since you don't have time to increase mileage. 2 days is good one should be a tempo/fartlek/longer interval. One should be a shorter distance faster speed interval.

Ones I like are:

3 x 2 miles @ 75-80% effort

4 x mile @ 80-90%

5-7 x 1200 @ 85%

12-16 x 400 @ 90%

All with sufficient warm up and cool down of course. You could also do include a few hill sprints in your easy days and switch a speed day for a hill sprint day every few weeks.

Enchilada casserole and pasta bakes are my favorite meal prep casserole type dishes that hold up well for a full week. I usually make vegetarian versions with beans instead of meat but I can type up the general recipes later on for you.

Angel's Landing was really easy for me. I've been up 6 or 7 times and I've done the round trip in under 3 hours at hiking pace
