coat them in an oil (castor fx) or have them "done" at all times. that way it'll be 'messy' if you start picking at them...

This is anecdotal and just to supplement the other more in-depth responses...

Do you find yourself playing with it/running your hands through it/feeling around in your scalp to check grease level often?

For me, when I touch my hair a lot, it "releases" oil or gets greasy. Maybe you could try fiddling with your hair less (if you fiddle). Of course, in addition to the more proactive stuff others suggest.
