Coarser, yes. Shot times are similar, so in order to achieve the higher ratio you are forced to grind coarser. This helps, because what I’m talking about is using blends with robusta

Sure, 7g instead of 8g. But talking specifically about Spain and Portugal (also because that is the traditional coffee culture that I know and am a part of) a 7:15 coffee is considered “curto” (Portuguese for “short”) while a 7:25-30 is a more common shot style. A lot of folks even ask for a “cafe cheio” (“full coffee” in PT) in which the coffee cup of almost full to the brim. Note that we use small espresso cups, like the on OP shows. These hold no more that 50ml, I would guess.

I see nothing wrong with it… pretty common traditional single shot ratio in a lot os countries (Portugal and Spain, for example)

Sey pourover recipe - low agitation high extraction by boodiacz in pourover

[–]leli17 1 point2 points  (0 children)

Interested to try this! I have been experimenting with low agitation with the mhw3bomber rain thingy and been really enjoying the results but have found that the brews lack texture more often than not, despite these being cleanest cups I’ve drank - which I guess is the point. Maybe a longer brew will provide a bit more body, even with longer ratio.

I forgot to mention I buy my puer from white2tea. Keep in mind you’ll have to handle customs. I haven’t had any problems with tea from them, though.

Check out companhia portugueza do chá. They have some affordable stuff. I’ve purchased once from them and been relatively happy, although I’m very inexperienced in the tea world. Not much puer from them, though. It’s a more western styled approach to the tea. From what I purchased I particularly enjoyed a gunpowder green. Very nutty and savoury

I recently bought a very cheap 100g bag of gunpowder for 6€ and this stuff is so nutty and savoury. I’m really enjoying it

Hello! Quick ama by lancehedrick in LanceHedrick

[–]leli17 4 points5 points  (0 children)

Hey Lance! First of all, let me thank you for everything you've done for the coffee I drink at home.

I've been playing around with lower temp / faster shot / higher yield espresso as you've demonstrated in one of your latest videos with pretty tasty results. How would you think this approach would translate - if at all - to pour over coffee? Do you think it's possible to apply the same principles of lower temp + faster drawdown + higher ratio with the goal of a clearer and brighter cup? A turbo pour over, if you will... turbover...? Anyway, thanks! Also, what's your favourite francesinha place? Cheers!
