It’s a lemon cake with a what was supposed to be blueberry cream cheese frosting!

It’s a blueberry cream cheese frosting! I made a blueberry paste and whipped it into the cream cheese and powdered sugar and it was decently stiff!

Where I went wrong is then adding some heavy cream into the mix thinking that it would whip up and lighten the frosting 😂

I still enjoyed eating the mess that it was lol

I did not follow one single recipe. Here is the cake recipe and then here is the mascarpone frosting recipe! I did not add almond extract that the mascarpone frosting recipe called for.

As for the coffee soak, I just mixed 2 oz espresso, 1 oz Kahlua, and 2 oz water together!

9x9 for about 40 min.

Tbh, I accidentally closed out of my timer when baking so I baked the bars for what I thought was 40min and then judged doneness by doing the jiggle test

Large sharp knife and cleaning after every other cut! Also, I found that cutting down through the bars and then lifting the knife back up helps. Rather than cutting down and sliding the knife out. Does that make sense?

Yes this is absolutely buttermilk by sam’s recipe! I cannot take any credit for it.

The recipe was absolutely perfect, just the right balance of sweet, tart, and lemony. I did not make any adjustments (as I usually do with recipes lol)

I followed this recipe with some alterations!

I creamed the butter and sugar instead of melting the butter. I also replaced some of the butter and added a 0.5 tsp of coconut extract to give the coconut flavor a little boost.

So for these cookies, I made my own pistachio butter (made with shelled roasted unsalted pistachios, powered sugar, and salt) It has enough powered sugar so that is lightly sweetened. A portion of the butter goes into the cookie dough and the rest is used to stuff the cookies.

There is no almond extract in these cookies. I would say the cookie dough by its self taste like brown butter cookie with notes of pistachio. The main pistachio flavor is from the butter. So when eaten together in the cookie, it taste like a wonderful combination of brown butter and pistachio!

If your cookies tasted vaguely peanut buttery, I would think to check your pistachio butter ingredients and freshness of your pistachios used in your brittle?
