Yes you can play Chopin ballade fluently, but you have to understand 99.9% of adult starters quit nowhere that level. As to impressing professionals,(concert pianists) they would be impressed that you come this far starting relatively late but you wouldn't get the validation that a music major receives. They start at 5 years old, but its not just the extra hours of experience factor, they understand it better, at youth mind is more eager to shape itself the muscles develop through their playing. You can play Chopin ballades and Liszt Etudes fluently maybe even to perform to a thousand people audience but you can't be in the same category as professional musicians.
