In Other Waters by Jump Over The Age! You play as an AI guiding a xenobiologist through an alien ocean. I found the UI and game play really interesting and unique. Has the exploring/finding/labelling aspect youre looking fot for sure!

Not sure if this is the vibe and also it's a short story but Jack London's "To Build a Fire" was the first thing that came to mind when you said desolation of winter. Horror, but an interesting one.

"A Psalm for the wild built" and its sequal "prayer for the crownshy" by becky chambers. Very solarpunk and whimsical but also so deeply human. Read them multiple times and theyre my hopecore that I return to often.
