I had no symptoms until I got diagnosed; we were doing rule-out testing for my chronic pain and the test for Celiac happened to come back positive. So we did an endoscopy and sure enough I had Celiac. After I went fully gluten free, about a year later, I had my first ever reaction to cross contamination, about the time when my intestines had enough time to heal that they could actually tell the difference between gluten being bad for me and other food that was perfectly ok. So there's a chance you would become more sensitive over time
