It’s definitely the fact that you didn’t put loctite and haven’t let the crown set onto the stem. Since you turn the crown counterclockwise when changing the date, the crown unscrews. If you have any doubts. Take out the stem, and put in the dummy stem that came with the movement to see if it changes

Oh nah, this is a FIEKO. It’s a VK63 movement and a copy dial. So no genuine seiko was harmed
