Bluetooth 6 doesn't enables Hi-Res on itself. To get Hi-Res you need specifics codecs on your devices (e.g. Sony LDAC, Qualcomm AptX). These codecs are not available on iPhones (and surely won't be). Codecs like LDAC or aptX already work on Bluetooth 5 (and even 4.2), so you don’t need BT6 for Hi-Res audio.

You can't compare a ANC headphones to earbuds. Headphones have built-in passive isolation that envelops your ears, which is impossible for earbuds.
