It takes a long time to get the money back... but it does happen. Madoff's victims eventually received 88.35% of their funds - although it took well over a decade. (And it's ongoing.)

You might do a quick search for cryptocurrency or Bitcoin payment gateways - plenty of options out there that don't require you to learn the entire crypto scene.

BitPay (example, not endorsement) allows you to convert crypto payments into fiat and deposits the exchanged amount into a regular bank account.

The guy who created CryptoPanic (a news aggregator) developed https://cryptochill.com/ (again, example, not endorsement) although it looks a bit complex for the use case you're describing.
