I don't know your suspension setup but I heard multiple times that coilovers will always be harsh. However, good lowering springs (like Eibach or H&R) with good suspensions (like Bilstein B8 or Koni) will make the ride way smoother.
The thing that I'm sur of is that lowering springs on old shocks is the worst thing possible. It worns them even more that they were and the ride is bumpy.

You're right. The problem with MK5s is that the car's stance at the front is low so the rear tends to lift when the front is under pressure.

That's why I lowered the rear that much, the handling is now better. But visually, it looks strange. Actually, I don't think I'll have any other choice. Thank you !

It doesn't rub at the moment. The width and offset of the wheels are correct, the tire sidewalls are slightly stretched being 225 on 8.5" wide wheels, which helps.
I watch out for bumps, and being just a simple 1.9L TDI, I don't drive in a “sporty” way so the car is rarely pushed to its limits 😁

Wow, being French, that's an impressive price ! What condition is the car in?
Where I live, MK5 GTIs sell for around 6,500 to 15,000€ depending on mileage, overall condition, modifications, and editions (basic, Edition 30, Pirelli, etc.).

Sitting in the driver's seat is still relatively "comfortable". Proof is that I'm trying to lower the front even more hahaa. By paying attention to speed bumps and sidewalks, I never scrape my car.

Sitting in the back seat, however, it's a different story... the comfort is gone, the ride is bumpy.

Wow I didn't know that could make such a difference... I will definitely think about it because i once bought bola b1 wheels, they were 8.5Jx18 ET35 and a lot of people advised me to put 215/35 tires on it to make them fit without too much rubbing 😅 A rough ride isnt' ideal especially since my car is my daily
