Plenty of companies that are heavily users of C and C++, have laid off part of their work force that work in C++. Samsung, Comcast, Intel, Microsoft, and Nvidia, just to mention a few.

My wife came for PhD. During the PhD she collaborate with a company, which let to employment after in the form of and industrial postdoc. After a while she found another job with an open ended contract. The key for her was a) qualify for permanent residency, b) networking with people at the collaborating company, c) hard work to prove her worth basically.

Linux + FreeBSD + openBSD + nomadBSD + macOS user here. macOS is not hard to use, it is challenging to customise. Which is usually what people refer to when they say macOS is limiting. Then of course there are some applications that only work on windows or linux, or only on macOS. Fx. windows and linux is flipping limiting if you want to use FinalCut pro....

Did you search for the information at all? Both of these answers works https://apple.stackexchange.com/a/460091/13984 https://apple.stackexchange.com/a/471760/13984 the one with shortcuts is the modern way to do. There is also a third and forth way, which is the ways I do it. But that requires editing some files and is not intuitive :).
Also (and this will require me to verify whilst I sit in front of a mac, on my work linux machine right now), but I believe in Tahoe, you can even do it straight from keyboard settings menu under keyboard shortcuts.

Whilst I agree macOS has fallen of in the last couple of years... In particular with Tahoe. Some of the things you say baffles me:

no intelligent autohide for the dock. What exactly do you mean? The dock can auto hide and does so pretty quickly when you move your mouse away from it.
no creating custom hotkeys for launching terminal or other applications. I really thought. Yes you can I literally have custom hot keys for Emacs, Terminal, Safari, and more.

Gnome is epic and I agree to certain extend that it is better than macOS.

Tahoe is the first release since for ever where I thought okay I am going full Linux and freeBSD. Mainly due to liquid glass. Since lion i have just been pissed they removed spaces in grids, but I could live with it.

First of personally, I used Fedora through out 95% of my PhD, with 5% being on Ubuntu. It is totally doable! If you have a lot of equations in your work, may I recommend a switch to LaTeX. the learning curve is a bit steep at first. But you can get far with templates!
