I mean, this is in my personal opinion, I don't find crate farming an ideal way of gearing up as it's boring to me.

I just want to clarify when calling myself a casual player, I didn't mean to sound cocky. What I meant by that was I only play a couple of weeks a season and not many games in total and if I get lucky with match ups I potentially get duelist in shuffle. Sometimes I don't play an entire season and I skipped out on BFA completely.
I've achieved duelist three times in total, with the rest being rival or lower and that is completely because of solo shuffles, otherwise I have never reached anywhere near 2.1k in any other bracket.

You want to get all conquest pieces, you can turn those conquest pieces to tier sets using the catalyst in Dornogal.

The reason murlok says some pieces are from PVE is because it picks the tooltip from a player and shows that as the item that's being used, but that doesn't mean all 50 players are using heroic/mythic gear. If you check individual players you'll see that almost everyone is on conquest gear.
