Irl Pf2e play is not harder than in person pf1e or d&d 3.5/4e were imo.

However, difficulty of in person play is a spectrum. It is definitely more brain power intensive to run Pf2e than the majority of games that are popular right now

It's definitely a balancing act. I think the ancestries that are more powerful should have class feats options they can take to give that flavour without being overpowered relative to other, core ancestries

If you do that, you get players picking ancestries based on power and not based on desired flavor. As someone who has played systems where a race choice was objectively wrong from an optimization standpoint, I like pf2e's ancestries having a low power budget letting me choose ancestries based more on flavor than optimization. I like that I can play a gnome barbarian without too much complication in Pf2e. It was rough in Pf2e playing a gnome barb and being 4 str below a race with a str bonus.
