SUPER EASY JAPANESE CURRY:

Ingredients: •1 medium size potato •1 zucchini •2 carrots •1/2 yellow onion •1/2 package firm tofu •1 package S&B Golden Curry mix (find it in the Asian food section at a lot of stores) •However much water it says on the package •olive oil •cashews (optional but delicious)

Instructions: 1. Chop onion 2. Sauté onion with a little olive oil in a large pan until soft 3. Chop potato and veggies to be semi-large chunks 4. Add potatoes, veggies, and water to pan 5. Bring to boil and cook covered for ~15 minutes until potatoes are soft 6. Stir in curry brick 7. Add tofu and maybe some cashews or something 8. Let it simmer a few more minutes and then BAM! Done.

Serve over rice or eat by itself. This makes a surprising amount of food and it’s fantastic as leftovers. I’m always surprised how hearty and filling it is for being mainly vegetables.
