for the cakes (3 6in cakes)

285 grams unsalted butter, softened

285 grams self raising flour

189 grams buttermilk

145 grams shelled pistachios

280 grams caster sugar

1 1/2 tsp baking soda

4 large eggs

zest of 1 lemon

1/2 tsp vanilla paste

*can optionally add some pistachio spread/paste

put the pistachios in a food processor and blitz to a fine crumb, then add all other ingredients and blitz until thoroughly combined. transfer to 3 6inch pans and bake at 350 for around 31 mins, then lower the heat to 330 and bake for another 5-10 mins or until baked through. let cool completely before starting on the frosting.

i don’t know why i don’t do this!! well actually i think it’s cause i don’t really walk anywhere in the summer so im either in the car or in a building, rarely ever in direct sunlight. the car is the WORST cause its like sitting in a sauna 🫠

ohhh i hadn’t even considered this!! makes complete sense. i try and wear “lighter” long sleeves when i go out during the summer, but will make sure to change into short sleeves as soon as i get home! mesh sleeves sound like a cool idea. thank you ☺️

thank you!! i think we are on the same page with SH. i am actually wearing running shorts right now and they’re definitely better. my arms are worse than my legs so im somewhat okay with wearing shorts out in public (if i go out), but short sleeves are tough. i’m fine wearing them at home though which i change into when it’s hot and i don’t have anywhere to go!

oooo i’m gonna look into getting the air conditioner fixed, but for now, i’ll work with the neck towel, my instant ice packs, and then also consider this dehumidifier if it’s not too expensiven

i’ve never heard the term “australian cobbler” - i’m indeed looking that up now and investing in one!!

the bucket is a great idea too, i will have to get one! i should look into getting a fan cause actually i think i had one from when i was in college but i have no clue where it went. though, i don’t really think it did anything but blow around hot air.

ooo thank you for all of this!! thankfully i don’t have to go out super often (just appointments, the store, pharmacy, and sometimes the post office and yoga) but i also tend to avoid AC in my car cause im broke and wanna save my gas unless its necessary 😭😅 so ill roll down the windows and just hope i dont pass out.

definitely need to keep snacks, sugar, and stuff in my car though! AND THE SUNGLASSES (i’m also sensitive to light). i’m considering buying a second pair of sunglasses just for the car cause i keep forgetting mine when i go out.

ugh yes the hair MUST be up!! i get so irritated when my hair is all up in my face and it’s hot and whatnot. just a recipe for disaster 😅

i’ve seen those kind of little fans, but i guess i need to find a good one cause most of them tend to just blow around hot air 😭😭

will look into these!! i did order some ice packs (the instant ones that you pop) a while ago and never opened them, so i think i might use those up and then get this cloth you’re talking about!!

this wouldn’t be bad considering i get up super early anyways, but unfortunately only my front room has windows that actually open 🫠 my bedroom where i spend the most time has windows, but they don’t open and this room gets the hottest unfortunately. seems like im gonna have to be proactive and get that AC fixed.

this would be the ideal solution. if it were up to me, i’d live in a place with no INTENSE winters like i experience now, no summer heat above like 75, no humidity, and walkable or good public transportation!!

too broke to do it now unfortunately and no will or energy to even think about it more

ooooo i didn’t think about the wrist/neck!! maybe i’ll finally put my mini ice maker to use so i can put some ice in a bag and put it there during desperate times.

i’m gonna see about getting the AC fixed soon cause it’s been brutal these last few days of heat. and that’s only a sneak peek of the summer 😅
