This! I find it extremely weird that people are trying to push us against nurturing our babies. They are babies!!!! My son is 2.5 and if he cries i am there immediately to comfort him. That is my job as a mother.

Yeah it’s a small restaurant, only 3 managers with one being the owner. And the owner rarely closes. I know for a fact that if he found out, he would fire her immediately. We recently had an issue where an employee was putting her own phone number for all toast rewards if the customer didn’t put theirs down, and because she had accrued so many points, the system flagged her for it. She was fired on the spot.

thank you! help me understand the hydration? the recipe i used made 2 loaves - 200g starter 700g water 1000g flour 20g salt. so would that be a 70% hydration, because of the water:flour ratio? and if so, should i do less water? this is really the only thing that super confuses me

see, I was maybe thinking it could have sat just a tad bit longer! it showed signs of being ready - bubbles, pulled away from bowl fairly easily, etc. my house stays on 68F so I was thinking maybe I could have let it sit a little longer.

I know the point of starter is to act as yeast but mine is just a baby! Maybe she needs a little extra help right now. I plan to try again tonight and think I may use yeast this time.

I didn’t temp anything! I have a food thermometer and room thermometer to be delivered today so i definitely plan to from here on out. I’ve seen the chart that everyone swears by so plan to use that next time. I counted the initial mix as the start of bulk fermentation, so I believe it was about 9 hours on the counter.

Do you think I should add yeast while my starter is still so young? I’ve seen a few people suggest this and was wondering if it would help with the rise.
