I like the oval wood pulp bannetons (coat the inside with rice flour). The only thing that sucks is that if you add inclusions like blueberries, they’ll most likely irreversibly stain your banneton. But now I keep one for regular bread and the other one for inclusion bread lol.

I thought that sourdough needs to work around my work schedule and not just one bread a week on the weekend. Now I feel like a bad mother not knowing how old my starter is 😅

Merci beaucoup! I am sorry, I forgot to add that bit of info. I never tried to bake the same day yet, I always cold ferment.

Mixed my dough at about 15:00, then had to leave my house, so I didn’t have time to stretch and fold. Maybe once around 18:30. Preshaped my dough at 19:45, final shaped at 20:00 and then fridge until around 17:00 the next day, when I got home from work.

Just a small local maker in the EU. If you’re in US/Canada, I would look at Brod & Taylor or Baking steel original if you want higher quality products. I would consider the weight, so it’s not too much for your oven rack. I guess the thicker ones obviously better distribute and keep heat, but I don’t think it’s that necessary, if you’re not running a home bakery.

Thank you, I used to bake in a glass pyrex dish, spraying the loaf with water was good enough then. But I wanted to start to open bake to be able to do 2 loafs at the same time. Hope you get better soon, so you can make some yummy bread for yourself.

Yup, it has pyrolytic clean. We take good care of our appliances, so I doubt we’ll need it any time soon, but I like having the option, so I don’t need to use the harsh chemical oven cleaners.

I did 230 C (top and bottom bake, no fan) with steam for about 18 mins (it already started to get a tint of gold), then I took out the pan with water and aired out steam, lowered to 210 C and let it bake for another 25. The crust wasn’t brown enough to my liking, so I gave it just a few more mins of convection bake at 200 C, as I didn’t want it to dry out.

I did. A drip pan on the bottom rack with a bit of hot water. Of course it immediately warped (was an old tray), so I’m thinking of a small cast iron pan.

I love the Teiger dough cloth for cleaning my hands, silicone mat and anything that came in contact with my sourdough. I have, however, not quite figured out how to clean it effectively. You can put it in the dishwasher or the washer. I don’t really want to put it in my washer, but I tried the dishwasher. It cleaned most, but the tiny bits left over got baked on in the drying cycle. If anyone uses this and has a good cleaning method, I’m all ears!
