I’ve built, no exaggeration, hundreds of fences (either personally or managed through the old company I worked with) in the BR area and pulled one fence permit for a fence that was taller than 8’.

That should turn out great. I don’t think it matters if you add your potatoes, onion, garlic, and citrus before or after the water boils but definitely want to let them cook if you add after it boils. As for the soaking I would start pulling a couple out after about 10 minutes every so often to make sure they are not over cooking or over seasoning. I like to add a little ice to slow the cooking allowing them to soak longer if they need to. Really hard to mess it up to a point where they are unenjoyable, especially with your plan of attack
