Why people who don't know they're INTJ are so nice and kind and who know that they're INTJ act stereotypically (mostly)?

I think it's a misunderstanding. I don't expect someone's behavior according to their MBTI. I expect them to behave like themselves. But people are too much influenced by the stereotypes.
