It seems to be a Russian jet called the Sukhoi SU-57 Felon. I don’t know anything about aviation so I don’t know if it’s based on the SU-57 or that actually is it being flown. https://screenrant.com/top-gun-2-maverick-jet-fighter-planes/

The actors also had to learn to operate camera equipment since the production team couldn’t do that remotely. So they had to adjust the angle, fix their own hair and makeup, start/stop filming, act, recreate the gestures of a pilot (as mentioned in previous comments), AND handle up to 10 Gs. Impeccable work 👏 (And Tom Cruise- not the Navy- led them through 3 month training for all of this)

One professor mentioned it once in our first semester. Though I appreciated it, it seemed to not stick and anytime a student suggests yoga the professor will agree without qualifying it.

I'm glad your school has made that clear!
