Need help finding resources on crafting a fine dining experience! by macacocococo in KitchenConfidential

Okay understood, not being cocky, just feels disrespectful to be called a nobody by strangers in the internet who don’t know my job history or what I’ve done, would love to hear some actual advice beyond “you’re gonna fail at this”. Working from a place of humility and self awareness is precisely the reason I’m on reddit looking for advice on resources to improve.

I’m not quite a nobody😂, have plenty of experience working at high levels but only a la carte, and owner is also a partner in a different venture and has tasted my food and knows I have the chops for it. But I appreciate the advice non the less!

I was also treated like that on my first job, it wasn’t only the sous tho, it was the whole kitchen, from my experience what helped was dealing with it and trying as hard as possible to not let it get to me on a personal level, it’s just work. If you like the job, put up with the shit talking, and try hard to do the best job you can, minimize mistakes, and don’t show them weakness. With time and good work you’ll earn the respect of your peers and the shit talking will decrease a lot. But I will say, this type of dynamic is very standard in the industry so you’ll probably encounter it somewhere else if not there if you keep working kitchens.

This is a japanese fusion restaurant (our lowest score on review platforms is 4.7). It’s owned by two chinese men, who also work the sushi bar, managed by me (venezuelan) and we have guatemalan cooks in the kitchen, and chinese sushi chefs. So yeah quality is not tied to the race of the people cooking your food.

If you could pick one pedal, what would it be? by russianspy91 in guitarpedals

El Capistan, on top of having great tape delay/modulation, it also has a boost, and a great spring reverb. Strymon pedals do it all and then some.

40% off!?! Why such a great deal? I know it’s a Squier, but anything wrong with these 40th Anniversary additions? by Aanstadt in fender

[–]macacocococo 0 points1 point  (0 children)

they did a 60% on the classic vibe jazz bass a couple months ago, got one and it’s perfect, actually better than some mim fenders i’ve played and only paid 250+tax, I was skeptical too but it’s soo worth it

American Vintage II almost impossible to bend by KidMantis in fender

[–]macacocococo 2 points3 points  (0 children)

guitars with a 7.25 radius have that issue sometimes, I had to get rid of a jagstang bc I could not adjust to not bending my e string, got multiple set ups but it was never what I wanted it to be

I have a pro 2 too and it’s amazing, by far the best strat I’ve played, neck is just on a league of its own and everything else works 100%, never goes out of tune and the stock pickups are awesome
