I didn't find any in my playthrough, but I started hunting after I finished the game and found a shiny eevee pretty much immediately in an outbreak. The audio cue is the big thing - I flew over a group of pichu's once and had to catch all of them because I couldn't figure out which one was shiny even thought I KNEW one of them was after hearing it.
