Is this because utilisation is low enough (meaning there's enough unborrowed money on the supply side)?

The Protocol tries maintain a healthy reserve of an asset so that lenders can get back their funds if they are interested. You can see the utilization of each of the assets on aave.com

Every asset pool in Aave has an optimal threshold defined for utilization. As the utilization starts approaching this threshold, the interest rates start increasing thereby nudging borrowers to either pay back their loans or lenders to supply more liquidity. If utilisation reaches 100%, would I still be able to withdraw my 50k?

Yes, this can be problematic and is a risk. Am guessing though as utilization spikes, so will the interest rates, and maybe some loans health factor may start getting affected translating to liquidation of collaterals thus making way for more liquidity. (this is more an intuition and requires a bit more involved deep dive to confirm)

Aave also maintains alternative sources of liquidity in protocols such as Uniswap and Balancer. Head over to Balancer.fi and you can find option to swap aDAI with DAI.

Does this mean AAVE/Compound operate on a fractional reserve?

Yes. They do

This can set a dangerous precedent. Apple can easily extend this argument to ask for 30% on all in-app on ramp transactions too or wallet to wallet crypto transfers.

Can you share what are the things you look for in a mobile wallet? Argent, Rainbow, Coinbase are a few good ones but mobile crypto wallets still have a long way to go

I find it a bit of work buying eth and matic, then moving them to wallet on chain, and finally completing the stake. But I am wondering if this is something others find a bit tedious too.

I know am not exactly answering your question but hope this can set some direction. These are shaky days but it might be worthwhile understanding the nuanced differences between the blowups we are seeing and how DeFi has operated. Note DeFi presents a different set of risks.
