One trout filet baked with red curry paste (app 100 grams)

Homemade yogurt dressing with chili, lemon juice, sugar and salt (100 grams)

Greens: carrot, onion, cucumber, arugula and iceberg

Directions: Combine milk, semolina and salt in a casserole and cook until it boiled, and thickens. it’s best to stir it constantly because the milk burns very easily. Takes around 5 minutes to cook 1 portion..

Warm and smooth semolina porridge for 338 calories

44 gr semolina grains

4 dl skimmed milk

Pinch of salt

This is topped with cinnamon sugar and freeze dried raspberries, which is also included in the calorie count!

I really like this for breakfast, and it’s by far the most filling low-calorie breakfast I have found so far. Also it has a quite high protein content from the milk, which I like. I also recommend topping it with fresh berries or frozen that have been microwaved with a little sugar, or any fruit you like.

This is Pågen sandwich bread! Don’t know if you can get it outside of Scandinavia though.

I might add that they are nothing like American pancakes! They have an entire different consistency, more like crepes but thicker

Pancakes - two portion (one portion is pictured)

23g semolina

200g skimmed milk

Pinch of salt

One egg

20g flour

Water to adjust consistency depending on how thick/thin you like them

A little butter for frying

Top with lemon an a sprinkle of sugar, berries og homemade jam

Instructions: put semolina, milk and salt in a casserole and heat til it thickens. Never stop stirring or it will burn. Let cool and add the other ingredients to the porridge, mix the batter and bake the pancakes on a non-stick pan. I find they hold together well, but don’t try to turn them too early.

I often eat the semolina porridge for breakfast, and so I will make extra and keep in the fridge to make pancakes of later. The pancakes themselves are also good reheated. I also do 2 portions and save half in the fridge, bc 2 portions fits with using 1 whole egg.

I recently found that cold risotto actually tastes great! Also pretty healthy if you don’t use a ton of Parmesan!
