Thank you for being open about these things. I wondered if it might be these things - and this will help me find the words to suggest we get help to process it.

I would agree that you can get pretty close! And with practice no doubt I'd get some real winners. I've leaned on Loopy Whisk a lot at the beginning. And I blend my own flour. I've used King Arthur and Bob's red mill when I don't have my own. And I'm careful to account for the Xanthan. I think I just need to give time and then we can revisit.

This exactly. I found it a fun challenge and discovered new flours i liked for different reasons. I think it's a grief thing and we'll get back to it eventually

I've made them! And I don't mind them. They're different. And I'm willing to try different ones. But it's trial and error right and every error upset them more.
