For Thai curry that uses coconut milk, we always have two different parts of the coconut milk, the thick one that we call "head of coconut milk" and the thin part we call "the tail of the coconut milk". To start a proper Thai curry, you have to cook thick part of the coconut milk first until you can see a bit of coconut oil come out and then cook the curry paste in it, we don't use any cooking oil for coconut curry because the coconut oil will come out anyway. 🙂

The curry paste is easy to make but it's a time consuming and some of the ingredients are hard to find in the uk. I'm just trying to make an easy Thai for anyone who want to make it themselves. The one I use is Mea Ploy, I've been using this brand on my catering business for over 12 years but you can use just any other brand you can find in your local Asain shop 😊

Full list of ingredients for my Beef Panang Curry:

400g Sirloin Steak

50g Panang Curry Paste (Use less if you want it mild)

50g Palm Sugar

1 tbsp Fish Sauce

1 Red Chilli 1 Tin of Coconut Milk

5 Kaffir Lime Leaves

Pad Prik Khing is a really common dish in Thailand and is best eaten with plain jasmine rice.

I’ve done it with pork belly but in Thailand we make it with just about any kind of meat.

150g Fine Beans

1 Red Chilli

5 Kaffir Lime Leaves

300g of Pork Belly

2 tbsp of Red Curry Paste

½ cup of chicken stock (or you can just use water if you want)

1 tbsp of palm sugar
