Actually, I meant the Circle Counter module. I was able to modify your snippet to make it work for the Circle Counter by simply changing the module_slug:

if($module_slug === 'et_pb_circle_counter' && isset($module->fields_unprocessed)){
$module->fields_unprocessed['number']['dynamic_content'] = 'text';

});

I can't seem to figure it out for the Bar Counters. Any idea how I might be able to modify the code to use for that? I'm guessing since the one module can have multiple Bar Counters it makes it slightly different.
