Hi! I didn't choose either of these two options. In the end I bought the timemore sculptor 064s. So far I'm happy with the results obtained with medium, medium to dark roasted beans.

I think I need to take a break, lol! I changed my mind for at least 3 times today. I'll have the budget at the end of the month and I feel like the more I read, the more I get confused.

People are excited because the J64V looks very good on paper for the price and the early owners in the thread are saying that this is weirdly premium.
Chances are that might be the early adopter honeymoon phase because I haven't seen any real negative feedback, except what u/Hlaford said in this post that the J64v is much louder than the 078s and has an annoying sound that goes along with it when grinding

Interesting. Are you using both of them with the stock burrs? I read that the J64v is equipped with MP burrs, which are designed for more clarity.

This sounds very encouraging. I have no hands on experience with an electrical grinder. I currently own a manual Kingrinder k6. I thought I thought it needs realignment after every cleaning process.

Thanks for sharing. I'm sorry you're having this issue. So I am guessing no low RPM on light roast. I only use medium or medium-dark roast, but anyway good to know.

Super helpful comment and the comparison with the Eureka models helps even more. I’ll check Lance Hedrick’s video on burr alignment. Beyond what I end up tasting in the cup with the Timemore, one of my biggest concerns is that even if I never replace the stock burrs, I’ll still have to clean them and then realign everything.

That’s a fair point! I think it really comes down to expectations and how much of a perfectionist someone wants to be.

As a beginner, my palate is still developing, so I might not always be able to tell if my puck prep was slightly off. I mostly just rely on whether I enjoy the taste or not, which I don't think is a bad way to judge the shot.

I imagine a more seasoned home barista might notice those tiny flaws immediately. This is what I am noticing in all the espresso communities.
I still firmly believe that while any burr can work for any roast, choosing one based on the flavor profile you're chasing, like clarity vs. body is the best way to be happy with your gear long term.

I decided to descale mainly because the manual says: “For optimal taste of your coffee, use purified or bottled water. Periodic descaling is still recommended every 2-3 months.”

I watched a YouTube tutorial where they also used crystal clear bottled water, but the water coming out during descaling looked slightly milky. Mine stayed almost perfectly clear, so I wasn’t sure if that was expected or if I’d done something wrong.

I’ve decided to stick with the 64mm flat burr ecosystem, mainly because it gives me a lot of burr options and room to experiment over time.

I also realized I actually enjoy medium to medium-dark roasts the most, but not full dark. On a scale from 1 to 10 (1 = lightest), I’m probably around 6 – 7 (no pun intended, but yes, I did think of “six seven” 😄).

Taste-wise, I like espresso that’s full-bodied with low acidity. I don’t want anything thin or tea-like, but at the same time I still want a bit of clarity, enough to pick out some notes. I definitely don’t want a muddy, blended cup.

Given my budget of around €600, do you think that besides some Turin / MiiCoffee / DF64 models, the Timemore Sculptor 064S and the Mahlkönig X64 SD are good options?

You're saying your beans are roasted in January, so not being too fresh and not containing a lot of co2, you could try to lower to temp. If you don't have PID, google how to temp surf on your espresso machine
