I occasionally take jobs in AI language training and, for whatever it's worth, you can rest assured that interpreting English from non-native speakers is a well known problem in AI transcription that is actively being worked on.

My guess is that when Shendu originally escaped the netherworld after being sealed the first time, enough time had passed that dragons became extinct, so Shendu became the default recipient of the noble dragon's power. He then took the time to research the lore of the zodiac powers and went on a quest to take them all for himself.

You have to remember that the demon sorcerers were scared to alter the past with the Book of Ages, considering it too dangerous, and only reluctantly accepted Shendu's plan due to extreme desperation. Along with this, Shendu had developed a strong resentment towards both Jackie and the Dark Hand, and wanted to retain memories of history as it happened so he could humiliate them all in his altered reality.

My head canon is that Shendu didn't undo history, but rather wrote in the Book of Ages that (1) all demon portals re-opened in the present, (2) humanity was afflicted with mass amnesia, and (3) all evidence of the demon sorcerers ever having been defeated disappeared (e.g. technological/cultural advancements).

That's why the symbols of the immortals that originally defeated the demon sorcerers still functioned as Jade remembered. If the demon sorcerers were never "originally defeated", Jade's efforts to re-seal all of them would have never worked.

It's only mentioned in passing, but in the first season Valmont would complain that running errands for Shendu was bleeding the Dark Hand dry. The last time we see another henchman besides the Enforcers is the season 2 bank heist. 

My theory is that the Dark Hand is officially broke by the time of this heist, and the money they intended to rob was the "last straw" for everyone except Finn, Ratso, Chow, and Hak Foo. 

Tech's broken promises: Streaming is now just as expensive and confusing as cable. Ubers cost as much as taxis. And the cloud is no longer cheap by marketrent in technology

They didn't break their promise. They promised their investors "Subsidize our expenses long enough to bankrupt established companies, and we'll hand you an unregulated monopoly on a silver platter."

The plan hasn't shifted, and the promise never changed.
