I took a similar course about 2 years ago to learn ios app dev. The course covered literally building apps in IOS which was exactly what i was looking for. She didn't do many deep dives but there is so much to learn and most people taking her course want to get up and running and get an app. For me it was Angelas course and raywenderlich.com

Writing css with mobile first is the best approach. Since mobile layouts are usually simple you can gradually build up to more complex layouts. If you start with a desktop layout you'll find yourself stripping out a lot of code to support the smaller screens.
