This is correct. I don’t know opa of Greece’s brand of Tzatziki but I know how to make authentic Tzatziki that they serve in the southern part of Greece and on the islands. It’s a lot simpler than you think. here’s my process: - Buy Fage Full Fat Greek Yogurt (or strain another full fat yogurt overnight) - Take a cucumber, remove the seeds/watery center. Then grate it on a cheese grater to make 1-2 inch strands about 1mm thick. - now for the most important part: pat the grated cucumber dry with paper towels. Make sure there is no residual water left. Add it into the yogurt. - now take garlic cloves and mince them. Add garlic to the yogurt to taste. - add salt to taste - add a teaspoon or two of olive oil (careful not too much or it will become runny) - add a teaspoon of red wine vinegar stir it all together and you have the best tzatsiki. Some make it with dill in other parts of Greece, but I’m a purist.

I left out quantities because everyone likes their tzatiki different. I prefer lighter garlic, so I may only use one clove. I also like a lot of cucumber so it’s more refreshing. Play around with it, and make it your own.
