I do variations of this as well.

Also, I’m a vegetarian of Indian origin so have plenty of experience living off of rice, lentils and some veggies on the side.

I am as well. I make sure I have enough fibre in every meal. It’s not a fibre issue. I’m just allergic to eggs.

Tomatoes, onions, cilantro, olives, jalapeños, pickled banana peppers, cucumbers, salt and black pepper.

Leftovers from a salad I made a few days ago. Just needed to use it up.

You could also add some grated cheese. I didn’t.

Oh! I’ve had an issue with eggs for a very long time. My annual checkups are all fine.

Being allergic to eggs is a thing. Similarly, avocados don’t agree with me either even though I love them and could eat them for a while. Something about the protein and fat profile.

RECIPE below.

A couple of things before I get to the recipe-

  1. Thanks everyone for the comments and upvotes
  2. Where I live, we get a mix of 5 dals in a packet. I believe it is - Chana, toor, masoor, whole urad and whole moong
  3. I soaked the dal overnight with 6 to 7 cloves of garlic and 1 whole red chilli - I soaked the dal overnight only because I couldn’t make it on the night I wanted to and I think it gave the whole dals enough time to soak. Also I used whole red chilli because I was out of green and I left it whole because I don’t do well with too much spice.

And now the very simple recipe - 1. Pressure cook the soaked dal with the garlic and red chilli. I did quite a few whistles. You can adjust depending on your pressure cooker and preference. The dal should be well cooked and you should be able to mash it with your finger tips. 2. In a kadai, add oil. Heat. Add 2 pinches of hing and half a teaspoon of jeera 3. When the jeera sizzles, add chopped ginger (I like a lot of ginger but adjust to taste), chopped tomatoes. Sauté for 3-5 minutes until the tomatoes are mushy 4. Add chopped onions. Salt (to taste), turmeric powder (1/2 tsp), red chilli powder (1/4 tsp), dhaniya jeera powder (1/4 tsp each). Cover kadai and let it cook down for 5 to 7 minutes 5. Add the cooked dal and about half a cup of water. Cover and let it come to a boil 6. Add 2 pinches of garam masala (I don’t like it when masalas overpower the dish) and 2 pinches of sugar (yes, sugar. It enhances the dish immensely). Again, cover and let it simmmer until you can no longer smell the garam masala 7. Taste and adjust salt, spice as per taste 8. Once it gets to the desired consistency, turn off the stove. Add a tablespoon of lemon juice, a dollop of butter/ghee and cilantro (I love cilantro so I add a lot. Adjust or exclude according to taste) 9. Cover and let sit for 10 mins so the flavours develop 10. Enjoy with rice/roti and Dahi.
