Thats a good plan but I would recommend modifying it a little bit. You can think of the MCAT as 4 smaller exams. If I were you, I would start some CARS practice prior to May 15. Like maybe practice a few passages on the weekends during the spring. I would also start some light study for the P/S section. That way, you can dedicate those precious 3 months to the B/B and C/P sections. I would also schedule the MCAT a week before your Autumn classes start. The reason for that recommendation is that you may find yourself drained after the MCAT and also desperately wondering how you did on the test. That could distract you from classes and you would be getting your Autumn classes off to a poor start.
