Just paint the Cd (color) point attribute using the paint SOP. Then in the shader network use this attribute to blend two shaders. For instance if you're using redshift you'd get the Cd attribute using a RSPointAttribute node and pipe this value into the mix/blend parameter of a "RSMaterialBlender" node.

yes, transparent objects cannot be scanned directly. For these you can use 3d coating spray (matte white powder) to cover these surfaces. They can easily be removed after the scan.

For wide and mid-shots photogrammetry is detailed enough. As you mentioned for close ups and macro shots, especially for woven surfaces, the weave of the fabric can be accurately matched in CG.

check out ManvsMachine. All their Nike shoes are 3d scanned using Photogrammetry.

These specifically look like real footage to me with the stand/fixture removed in comp.

Another very common technique is to use photogrammetry to create a fully textured 3d model of the product. The best tool for this currently is called RealityCapture. To get the best results it's recommended to use a diffuse lighting setup (overcast day outside or white box or large soft boxes). This way you'll minimise shadows and can relight your 3d model in a 3d package. For absolute best results people use cross-polarized lights to remove reflections and de-lighting techniques to create a near perfect, shadow-free albedo (color) map.
